Berry, berry refreshing!
Summer has officially arrived here in New York, which means sweltering heat mixed with the unrelenting humidity. Basically we’ll do anything to keep cool (a LOT of Mister Softies, Italian Ices, People’s Pops). So when we spotted some fresh strawberries and a bushel of mint at the Farmer’s Market this weekend we knew Strawberry Mint Lemonade was in our near future. This drink will quench your thirst and cool you down, at least just for a little bit. Enjoy!
We used Kelly’s method of infusing simple syrup with mint. Basically toss the mint leaves in after the sugar has dissolved into the water and simmer for 5 minutes, let steep for 8-12 hours. Pureed strawberries give the lemonade the strawberry flavor.
Strawberry Minted Lemonade
Strawberry Puree
1 pint of fresh strawberries, rinsed and hulled
1 tablespoon sugar
1 tsp fresh lemon juice
2 tablespoons cold water
Place all items in a blender or food processor. Puree until smooth. Strain through a fine sieve and discard the seeds. Cover and refrigerate until needed.
Mint Simple Syrup
1/2 cup sugar
1/2 cup wawter
1/4 cup loosely packed fresh mint leaves
In a saucepan over medium heat, combine sugar and water, stirring until sugar is dissolved. Add the mint leaves and simmer for 5 minutes. Remove from heat, cover and let stand at room temperature for 8-12 hours. Strain into glass jar, cover and refrigerate until needed.
Lemonade
1 1/2 cups fresh lemon juice (about 6-7 lemons)
1/2 cup mint simple syrup
4 1/2 cups of cold water (seltzer if you want it sparkling!)
Strawberry puree
Make strawberry sauce and mint simple syrup. In a pitcher, mix fresh lemon juice, water, simple syrup. Stir until combined. Add the strawberry puree and stir to combine. You can chop up some mint leaves for extra minuteness. Pour over ice in a glass and garnish with strawberries and mint!
